After a two-year hiatus, Brandon Baltzley (author of Nine Lives: A Chef's Journey From Chaos to Control and chef of upcoming Water Street in Woods Hole, MA) is taking the collective CRUX on the road for a four-city tour. The second stop takes him to Chicago, where he partners with Sauced and Locallective for three pop-up dinners exploring the cusine of the Rust Belt.
Laura Higgins (Ribelle) and Claudette Wilkins (Bracero Cocina) join Brandon Baltzley in the kitchen for all three nights. Special guests Patrick Sheerin (Trenchermen), Kevin McMullen (Band of Bohemia) and Pat Niebling (Three Floyds) will also prepare courses for the third dinner. The menu is designed to capture the flavors of the Midwest, with dishes such as wood-fired cabbages with smoked fish and Branston pickles, whipped duck liver with black walnut granola and beef tongue pot roast.
